Yummies at Retreat!

Tasty yummies at paper crafting retreat is a tag team effort. We started with apps this time. Shots of tomato juice from jars canned on 9/5/18 at Mom and Dad’s house. Add about 1 tsp of Old Bay seasoning per quart jar of tomato juice.

Next, curry tuna quinoa bites were a hot app served with pickled beets. The beets were canned on 8/5/18 at Mom and Dad’s house. I had ginger tea in a fun glass.

I created the quinoa bite recipe moments before frying them. Here is the recipe in case you want to try it. It makes enough patties to serve 12.

Curry Tuna Quinoa Bites

3 – 5 oz cans tuna in water, drained

2 tsp Penzey’s curry powder

about 1/3 cup cooked purple onion

2 large eggs

1/2 cup dry quinoa, cook the 1/2 cup dry quinoa in 3/4 cup tomato water which makes about 1 cup of cooked quinoa

What’s tomato water? It’s the top part of home canned tomato juice. It separates from the pulp during storage and tomato water rises to the top part of the jar. It is partly shown in the above photo of the tomato juice shots.

Mix all ingredients in a bowl, adding more or less quinoa so the mixture is slightly wet.

Fry on both sides in extra virgin olive oil and serve hot.

Next courses were served together, super awesome salad provided by Cheryl and Aunt Dollie.

Faye made her famous and so delicious chicken wild rice soup.

The four courses took a little over 2 hours. Faye served yummy chocolate chip bars for the fifth course. Mom and I may serve the sixth course yet tonight. Depends on if we need a little bed time snack! It’s Sassy Cow whipping cream whipped with 1 tsp vanilla and 2 packages of instant coffee Mom had in her stash. I was wide awake last night after licking the beaters from making the whipped cream. So maybe coffee infused whipped cream is not a good idea for a bed time snack!
